Bonefish Grill is a seafood restaurant chain founded on January 15, 2000 in St. Petersburg, Florida by Tim Curci and Chris Parker. It is owned and operated by OSI Restaurant Partners headquartered in Tampa, Florida.
OSI Restaurant Partners acquired Bonefish Grill on October 5, 2001. At the time, the chain had three locations. In 2006, Bonefish Grill announced the opening of its 100th restaurant. As of 2010, there are 152 locations, in 28 states nationwide. OSI Restaurant Partners also owns the Outback Steakhouse and Carrabba's Italian Grill franchises and joint partnerships respectively.

Bonefish Grill is known for its use of rare or otherwise uncommon fish species in its dishes. There is typically eight different types to choose from on any given day.
One of the chains most-ordered and most interesting cocktails is the “Pomegranate Martini.” Fris vodka infused with mangos for 5 days then served with three frozen grapes.Bonefish Grill is also famous for its “Bang Bang Shrimp” appetizer, which consists of shrimp tossed like a salad in a spicy sauce.
Bonefish Grill has a history of partnering with various charitable organizations including the American Red Cross, and with the help of nationwide restaurant industry, raised over $18 million dollars in Dine Out for America for Victims of 9/11 in 2001.
